Although our CB dinner series started in 2009, we have not had an abundance of different teammates come through the Charlie’s Burgers doors. We have been fortunate to have attracted a professional, fiercely loyal and above all charismatic crew of miscreants from some of the best restaurants in Toronto. The CB team is divided between the dinner series and our wine programs, which started in 2013. Over the nearly 10 years we have been putting on CB dinners, we have had the good fortune of having collaborated with some of the world’s best chefs. It has given us a global perspective on how things are done in different restaurants. It has also allowed us to refine and perfect our unique take on service, all while managing to have a little bit of fun along the way.
Our wine team manages all aspects of wine for our menus, CB Wine Program and CB Reserve Program. We taste upwards of 800 wines a year to make our selections. We work directly with the vineyards and wine makers. We handle all aspects of sourcing, selection, tasting and importing ourselves. All things wine at CB have been headed by Donato Carozza since the very beginning. Donato’s nearly 20 years in the wine industry, his deep connections with wineries across the globe, and his profound understanding of real wines and proper wine making, have granted us the ability to showcase truly unique, revolutionary and progressive wines over the years. The CB Wine Program and CB Reserve program have developed a unique voice in the world of wine within Canada and North America. It is a privilege to be able to do what we love and share our wine treasures with our members.
